Italian Potatoes and Peppers

2 to 3 T olive oil
1 med. Green pepper cut in strips
1/2 onions sliced
salt & pepper to taste
3 med. Baking potatoes
1 med. Red pepper cut in strips (opt)
2 garlic cloves crushed
2 T fresh basil or 2 t dried

Preheat oven to 400°. Cut peeled potatoes in half lenghtwise, then slice into eights. Coat bottom of baking dish with the olive oil. Add potatoes flat side down and bake 15 min. Add rest of ingredients and toss. Reduce heat to 325 & bake for 45 min. -Or reduce to 350° & bake 30 min. Check that all veg are cooked. (Can use other veg. With this .
