Yellow Squash Casserole

1 1/2 LB squash
1/2 LB grated cheddar cheese (2 cups)
1/4 to 1/2 cup diced onion
2 TB Butter
1 tsp salt — also salt to taste

Reserve 1/4 cup cheese Peel & slice squash. Put sliced squash & diced onion in pot. Cover with water & add 1tsp salt. Bring to boil. Simmer about 10 min. or until soft. Drain thoroughly. Add butter. Mash squash. Add cheese & mix in well . A sprinkle of salt may be added if desired. Place in oven-proof casserole. Top with reserved cheese, sprinkle lightly with paprika. Bake at 350* for 30 min. or until cheese is melted.
